- 4 suitable potatoes
- 200 g fresh or canned mushrooms
- half a bell pepper
- one tomato
- a sprig of green onion
- an egg
- butter for greased form
- 2 tablespoons broth
Method of preparation
First we put a pot of boiling water in which we add the potatoes to the shell. Boil them for 20-25 minutes, then put them in cold water and peel them. Then cut them in half and remove the core with a teaspoon (to remain like boats). We keep the core.
Finely chop the onion and sauté it in 3 tablespoons of oil and 3 tablespoons of water. Add the diced mushrooms and the thinly sliced bell pepper. Leave on the fire until everything softens.
Add the peeled and diced tomatoes, the core taken from the boiled potatoes, the finely chopped parsley and match the taste with salt, pepper, paprika. Leave for another 2-3 minutes and turn off the heat.
