Preheat the oven to 220 degrees Celsius.
Cut the eggplant in half lengthwise, then into slices and cook on a hot grill, greased with a little olive oil. They can also be fried in an oil bath.
Cut the onion and garlic into juliennes and sauté in a little oil for 5 minutes.
Peel a squash, grate it and cut it into cubes. Tomatoes and zucchini are sliced.
