Step 1: Put the sesame seeds in an anti-warning pan, over medium heat and fry very little until golden. Always mix with a wooden spatula and do not leave them on the fire too much because if they start to turn brown, the taste of the pasta will be more bitter. When they are "golden" (I attached a photo with before and after frying) take them off the heat and leave them to cool.

Step 2: Then put them in the food processor with the 8 tablespoons of sesame oil and salt and mix well. We will have to peel the seeds off the walls of the pot a few times and keep stirring until they become like a thick cream.

So far we have obtained PASTA DE SUSAN (tahini)

To obtain the Tahini sauce, add in the robot 3 cloves of cleaned garlic and cut into 4 and mix well. Then put the pasta in a bowl and add the olive oil and lemon juice, stirring lightly with a tablespoon of wood. If you want the sauce to be thinner, add a little warm water, stirring gently. You can also put finely chopped parsley.

* (I also put the oil and lemon in the robot, but the paste seemed to harden harder. I thought I ruined it. But then I added hot water a little and I mixed lightly and I seasoned the basil :) but they must be mixed nice manual, not with the robot).

Health benefits

Chickpeas, the main ingredient in hummus, are rich in protein, carbohydrates and fiber. It is a healthy food that helps fight certain cardiovascular or digestive diseases if it is introduced in the daily diet, along with other vegetable-based foods. And garlic and olive oil, the spices that give hummus a wonderful taste, are also part of the Mediterranean diet, which has become famous due to new studies that confirm its qualities.

The ideal partner of hummus is baked bread, cut into thin slices. A lower calorie option is to serve the hummus with pita, which is rich in fiber and vitamins or even with slices of cucumber or red pepper.

Specifically, humus is a rich source of omega-3 essential fatty acids, which helps protect the heart system, and nutrients from chickpeas and tahini sauce. In addition, the humus contains:

  • Iron
  • Vitamin B6
  • Manganese
  • Copper
  • Folic acid

The amino acids made up of the trio tryptophan, phenylalanine and tyrosine are substances that have a positive effect on sleep and general mood. In addition, chickpea fiber helps in the digestion process and regulates blood lipid levels.

It controls, however, the humus portions

Although a tablespoon of humus is enough for a high intake of nutrients, we can not get rid of calories. A cup of humus contains 408 calories, so it is recommended to control the portions and not to overdo it.

Choose whole sesame tahini for a product full of nutrients!

Whole sesame tahini paste contains seeds from organic farming. Tahini is traditionally used in cuisines in the Caucasus, the Middle East, the eastern Mediterranean, northern Africa and Southeast Asia.

Sesame paste - Tahini is delicious. To prepare it you need sesame seeds and oil.

Put the sesame seeds in a pan over low heat, chewing all the time because they fry very quickly. Sesame seeds should not brown but just become a little brittle and shiny.

Then remove from the heat and place in a tall bowl and mix with oil. Be sure to mix the seeds with the mixer vertically, with a small blade and in short batches. Do not hold the mixer at high speed or for a long time as you risk sticking it out. At low speed, in short intervals of 20-30 seconds, with a lot of patience you will get the sesame paste so necessary for some Arabic dishes. It didn't come out as fine as the ones in the trade, but for the ordinary household utensils it was made with, I'm more than happy. And the price-quality ratio beats by far those on the shelf of specific stores.

Homemade tahini paste

A homemade tahini paste means you know exactly what you put in it, plus it doesn't compare any of the trade with the homemade one, you need 2 ingredients and a powerful blender, and the sesame paste is ready in 15 minutes.

Today I wanted to make baked eggplant with yogurt sauce and when I take the tahini pasta from the pantry, get it from where it is not good that I had sesame seeds at home, because otherwise I don't know what I was doing, the car is in service , and the eggplant was already in the oven.

But you know how it is, when others can do it and you just take it and use it as if it's better, although consciously you know it's much better made by you at home, so I took the sesame, I took care of it and I made a tahini to lick your fingers.

Tahini pasta can be talked about a lot and well, it is certain that it is used as an ingredient for many dishes, in the morning in Asian cuisine. But I don't care anymore and I invite you to stay with me for the list of ingredients, but also for the simple way of preparation.

Method of preparation:

Put 50 ml of vegetable oil in a cold pan, add the sesame seeds and cook over low heat until they start to turn a golden reddish color. Mix in one, otherwise the seeds on the bottom of the pot will burn, and the ones on top will remain raw.

Pour the seeds into another cold bowl and let them cool.

Add the sesame seeds in a blender and mix until you get a fine and creamy paste. If necessary and do not mix, remaining on the walls of the vessel, add the other oil.

I first mixed the pea dish in a thick sauce. I didn't want a fine, fine paste to come out, so I used the hand blender. If you think it has too much sauce, you can remove it so that the paste does not come out too liquid, as happened in my case.

Then I added the two tablespoons of tahini, the crushed garlic cloves and the lemon juice.

I mixed a little more to grind the garlic as much as possible. At the end, I adjusted the salt to taste and a tablespoon of olive oil.
