Chocolate and nectarine tart & # 8230

For the dough I used 450 gr of flour, half an envelope of baking powder, that is 5 gr, 150 gr soft butter, 100 gr sour cream, 50 gr sugar, 2 eggs.

I first mixed the eggs with the sugar, sour cream and butter.

Then I gradually added flour mixed with baking powder. First I mixed with the target and then I used my hands directly.

At the end I formed a ball that I wrapped in a food foil and put it in the fridge for about 45 minutes.

In the meantime, I cut into cubes about 4 nectarines and I prepared the chocolate cream.

I melted 300 gr of chocolate with coffee on the steam bath. I mixed in the chocolate quite often, so that the chocolate melts faster and does not heat up too much. When all the chocolate had melted, I took the bowl from the steam bath and added 100 gr of sour cream and 50 gr of soft butter.

Then I incorporated 2 eggs and the cream was ready.

I divided the dough into 3/4 and 1/4. I spread the larger part with the help of the twister on the slightly floured table. I really liked the dough, it is easy to work with.

Also with the help of the rolling pin I moved the dough spread in the shape of a tart, and with the help of a fork I pricked the dough from place to place.

I then spread the nectarine cubes over the dough & # 8230

& # 8230and then the chocolate cream.

I spread the remaining dough in a sheet with the rolling pin and then I cut it into strips that I placed on top of the chocolate cream in a kind of grid.

Bake the tart for 30 minutes at 180 degrees (preheated oven) and another 5 minutes at 200 degrees.

250 gr white flour for cakes
125 gr butter
125 gr sugar
an egg

Ingredients for vanilla cream:

3 yolks
90 gr sugar
3 tablespoons starch
a pinch of salt
375 ml milk
an envelope of bourbon vanilla sugar

fruits: 300 gr raspberries and 2-3 nectarines

Method of preparation:

For the dough, quickly mix with your fingers the butter cut into pieces with the flour, make a hole in the middle and add salt, sugar and egg so that the salt does not come into too much contact with the egg.
Stir until everything is well incorporated, but without stirring too much. If the resulting dough is too dry, add 1-2 tablespoons of water, and if it sticks to your hands add a little more flour.
Wrap the resulting ball in plastic wrap and refrigerate for 3-4 hours.

While the dough cools, you can prepare the vanilla cream. In a deep saucepan, mix the salt, sugar, vanilla sugar and starch. Put on the fire and stir over low heat, gradually adding the milk. Mix with a whisk to prevent lumps. After you have added all the milk and the mixture has started to thicken, set the bowl aside on the fire.
One third of this composition should be mixed with the 3 yolks (beaten before). It is then incorporated into the above mixture. Leave it on the fire for another 2 minutes, stirring constantly. The cream obtained is then left to cool.

Remove the dough from the fridge and spread it on a sheet that is neither too thick nor too thin. Use a special form of tart (you can find them on the market), with a diameter of 26 cm, which you grease before you put the dough with a little butter.
To make it easier when you place the sheet in the form, spread the dough on a baking sheet and then turn it face down in the round tray. Slightly peel off the baking sheet.
Punch the dough with a fork in a few places. Bake at 180 degrees in the preheated oven for 15-20 minutes.
Remove the dough from the oven and allow it to cool well.
Vanilla cream is poured on the counter and slices of nectarine and raspberries are placed on top. Leave the tart to cool overnight.


Ricotta And Nectarine Tart

1. Preheat the oven to 160C and grease a pan with butter, including the edges. Beat the sugar and butter together in a large bowl with an electric mixer for about 3 minutes or until the composition becomes pale and fluffy. In a separate bowl, mix ricotta with orange peel and vanilla.

2. Add eggs to butter and sugar, one at a time, beating after each addition, then add the ricotta mixture and beat until combined. Sift flour and baking powder and mix gently to combine. 3. Meanwhile, combine honey and 100 ml of water in a small saucepan, bring to a boil and reduce to a simmer. Add the lemon juice and peel, then simmer for about 5 minutes. Add the chopped walnuts and set aside to cool. It will thicken while it cools: if it becomes too thick, add a little water and put it back on the fire. Cut the nectarines into slices and arrange them on top of the cake. Brush with honey and walnut syrup before serving.
