  1. Carefully place the eggs in a saucepan (with the shell on obviously) and fill the pan with water such that it covers the eggs, (a little bit of the egg might not be covered this is fine)
  2. Put the pan on a high heat on the stove
  3. When the water comes to the boil leave boiling for 4 minutes (not a second longer) and then turn the heat right off but leave the eggs in the pan for a further 3 minutes
  4. after 3 minutes take eggs out of the pan and into the bowl of ice water to leave to cool
  5. This can be prepared the night before. The colder the easier it is too slice!

What a rubbish recipe, my tried and tested method is eggs in cold water, boil for 10 minutes remove and place in cold water for 5 minutes. Shells come off a dream. In your recipe the eggs collapsed when being shelled and the yolks are soft.-19 Aug 2015

Perfect Steamed Boiled Eggs Recipe

Why It Works

Hard Boiled Eggs Recipe

Place eggs in a saucepan cover at least one inch over eggs with water. Bring to a boil. Turn down heat so you have a medium boil. Boil for 7 minutes. Place in a bowl with ice water to cool quickly and help them peel easier.

Making Easy Peel Hard Boiled Eggs Step By Step

Perfectly cooked hard-boiled eggs aren’t difficult — and, when you do it right, not only do you have an exquisitely yellow, tender center but you also have a hard-boiled egg that is easy to peel.

1.Cover with water
Set the eggs in the bottom of a large pot or saucepan and cover with cold water by 2 inches.

2.Bring to a Boil
Set the eggs over medium-high heat and bring to a rolling boil.

3.Remove from Heat
Remove the eggs from heat and cover the saucepan with a fitted lid.

4.Time for 13 minutes
Set a timer for 13 minutes and walk away. The eggs will cook slowly and perfectly in the hot water.

5.Rest in an Ice Bath
In a large bowl, make an ice water bath. Strain the eggs from the hot water and place them in the cold water for 5 minutes.

6.Crack and Peel
Carefully crack the eggshells, and gently begin removing the shells, dipping the eggs back in the water, when necessary.

The best kind of eggs to use for boiling are older ones. Don’t ask me why because I don’t have the hard answer. I just know that it works. I’ve heard it before so just do it. They cook more evenly and peel so much easier when they’re not fresh. I like to use eggs that are a week or even 10 days old.

The Perfect Recipe for Perfect Hard Boiled Eggs

Decide how many eggs you want to cook and then choose a pan that allows them to lay in one layer on the bottom of the pan.

Place the eggs in the pan and then fill the pan with enough water to cover them by 1 inch. Place the pan over high heat and bring to a boil. Once the water is really bubbling and steaming, turn off the heat and cover the pan. Let them sit in the hot water for 12 minutes to finish cooking. (Set a timer so you don’t forget.)

After 12 minutes, pour off the hot water by tipping the pan into the sink. Then run cold water over the eggs for several seconds. When they are cool enough to handle transfer them to a bowl and place it in the refrigerator until you are ready to eat them or use them in your favorite recipe.

Fill a saucepan about a quarter of the way with cold water. Place the eggs in a single layer at the bottom of the saucepan. Add more water so that the eggs are covered by at least an inch or two of water.

The more eggs that are crowding the pan the more water you should have over the eggs. 6 eggs should be covered by at least an inch, 7 to 12 eggs, 2 inches.

Adding a teaspoon of vinegar to the water may help keep egg whites from running out if an egg does crack while cooking. Also some people find adding 1/2 teaspoon of salt to the water helps prevent cracking as well as making the eggs easier to peel.

If you have the type of stove burner that doesn't retain heat when turned off, you might want to lower the temp to low, simmer for a minute, and then turn it off.

Depending on how cooked you like your hard boiled eggs, the eggs should be done perfectly in 10-12 minutes. That said, depending on your altitude, the shape of the pan, the size of the eggs, the ratio of water to eggs, it can take a few minutes more.

Or if you like your eggs not fully hard cooked, it can take a few minutes less. When you find a time that works for you, given your preferences, the types of eggs you buy, your pots, stove, and cooking environment, stick with it.

If I'm cooking a large batch of eggs, after 10 minutes I'll sacrifice one to check for doneness, by removing it with a spoon, running it under cold water, and cutting it open. If it's not done enough for my taste, I'll cook the other eggs a minute or two longer.

I also find that it is very hard to overcook eggs using this method. I can let the eggs sit, covered, for up to 15-18 minutes without the eggs getting overcooked.

Or, if you are cooking a large batch of eggs, remove them with a slotted spoon to a large bowl of ice water.

I find it easiest to peel the eggs under a bit of running water.

The best way to store hard boiled eggs is in a covered container in the refrigerator. Eggs can release odors in the fridge which is why it helps to keep them covered.

They should be eaten within 5 days.

The good thing about this method is that even if you forget and the eggs sit in the water a few minutes longer than you had planned, they'll still be fine.

Some people like their eggs less or more hard cooked than others. If you want your eggs still a little translucent in the center, let them seep in the hot water for only 6 minutes or so.

Perfect Hard Boiled Egg process:

  • Step One – Boil your water. I know this seems like a tedious task, but wait for it to be undeniably bubbly so the water is nice and hot!
  • Step Two – Gently add your eggs and leave them 11 minutes in the boiling water.
  • Step Three – Turn off heat, leave the pan on the burner with eggs. 11 minutes.
  • Step Four – Pour water out of pan, add ice and cold water. 11 minutes.
  • Step Five – PEEL IN THE WATER.

With these five steps your eggs will be perfectly hard boiled and peel like a dream.

Peeling in the water surprisingly has a huge impact on how well they peel. Don’t skip this step. Keep dunking them into the water over and over again while peeling. The water gets in between the membrane and the shell slides right off.

It is seriously that easy. Where has this technique been the last 27 years of my life.

How to Hard Boil Eggs

Nothing beats a perfectly boiled egg, but short of sacrificing an egg and cracking it open, it can be difficult to know when that egg is perfectly cooked. Rest assured, we have a few tricks to get you that perfectly soft- or hard-boiled texture you're after. And once you've mastered your hard boiled egg, you're well on you way to egg salad, cobb salad, and perfect deviled eggs worthy of your Easter brunch table!

1. Start with old eggs

It might sound weird, but old eggs peel more easily, so you won't risk tearing up the whites. Using old eggs is #1 BEST way to ensure your eggs are easily peel-able.

2. Bring it to a boil

No matter the doneness you are after, this step is the same: Place your eggs in a large pot and fill with water. Bring the water to a boil over medium heat, then turn off the heat and cover with a lid.

3. Set your timer

This is the most important step! If you are looking for soft-boiled eggs, set your timer for 7 minutes exactly. If you want hard-boiled eggs, set for 11 minutes. (We're serious when we say every second counts, so don't neglect your eggs for another minute of Stranger Things.) While the timer is going, get a large bowl of ice water ready. (Trust us, do it now.)

As soon as your timer goes off, transfer your eggs to the ice water. Shocking the eggs helps halt the cooking process they only need to hang out in there for a minute or two.

5. Peel away

Since you used older eggs (remember, step 1, guys?!), peeling your eggs will be a breeze.

Mistakes to avoid

The biggest mistake is usually made in the cook time. Not setting a timer or just guessing that the eggs are done usually result in overcooked eggs and a gray ring around the yolk. Be sure to only boil your eggs for 11 minutes, no longer! If you like a softer boiled egg you can reduce the time to about 7 minutes and you'll have a softer, but still set yolk.

Don't forget the ice bath either. Carry over cooking is real and if you just drain the eggs (or even worse, leave them in the hot water) your eggs will keep cooking. As soon as the 11 minutes are up transfer the eggs to ice cold water and let them sit in there until completely cold. Wet eggs also peel better, so peel them straight from the bath.

How to store hard boiled eggs

Once eggs are hard boiled they are best stored still in a sealed container, in the refrigerator for up to week. The eggs can be peeled as well, but typically stay fresher longer if kept in the shell.
